You can use Mayonnaise

This is made from eggs, it sounds gross,  but it works and you can’t taste it. It also makes the cake more moist.
Use one heaped teaspoon for each egg it calls for. So if you’re using two eggs, use two big teaspoons full.

My mom made a chocolate cake without eggs. It had Vinegar and Baking Soda to make it rise. She called it a wacky cake. Does anyone know about a cake like that and have a recipe?

Bake a cake without butter or shortening?

Are there any recipes that allow you to bake a cake without any butter, margarine, or shortening? The only baking things I really have are flour, eggs, milk, baking powder, sugar, vegetable oil, and baking soda. Is it possible to make a cake with just these?


Yes, these are generally referred to as fatless sponges etc.

Some boxed mixes call for the addition of milk, an egg, and some veg oil.

Just be sure that you read through the recipe before you start measuring ANYTHING.

Does anyone have a recipe for a light sponge cake without eggs?

I want to make a cake for my boyfriend’s step dad who is allergic to eggs. I’ve made cakes in the past without eggs during cooking lessons at school and they have always been really heavy, but I want to make a light cake.


Here are two recipes, it’s up  to you which one you choose, but they are both as good as each other.

225g/8oz Self Raising Wholemeal Flour
2 tsp Baking Powder
175g/6oz Caster Sugar
6 tbsp Sunflower Oil
240ml/8fl.oz. Water
1 tsp Vanilla Extract
4 tbsp Strawberry or Raspberry Jam
Icing sugar for dusting


1. Preheat the oven to 180C, 350F, Gas Mark 4 and grease two 20cm/8 inch tins and line them with baking parchment. Set aside.

2. Sift the flour and baking powder into a large mixing bowl, stirring in any remaining bran from the sieve then stir in the caster sugar.

3. Add the oil, water and vanilla extract and mix well with a wooden spoon, until the mixture is smooth.

4. Divide the mixture equally between the two prepared tins and bake for 25-30 minutes until golden brown or until the centre of the sponge springs back when lightly touched.

5. Allow the sponges to cool before turning out and transferring to a wire rack.

6. To serve, remove the parchment from the sponges then place one of the sponges onto a serving plate, spread with the jam, then put the other sponge on top to sandwich it. Dust with icing sugar before serving.


* 200 g sweetened condensed milk
* 140 g self-rising flour
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 60 ml melted butter or margarine
* 1 teaspoon vanilla essence
* 75 ml water

Sieve the flour, baking powder and baking soda together.
Mix the flour mixture, condensed milk, melted butter, essence, and water and beat well.
Pour the mixture into a greased and dusted 6 inch diameter round tin.
Bake in a hot oven at 200 degrees C (400 degrees F) for 10 minutes.
Then reduce the temperature to 150 degrees C (300 degree F) and bake for a further 10 minutes.
The cake is ready when it leaves the sides of the tin and is springy to touch.
When ready, take out from the oven and leave for 1 minute.
Invert the tin over a rack and tap sharply to remove.
Cool the the cake on a wire rack.

How do I get a cake to rise when using No-Egg powder instead of eggs?

The powder seems to work with muffins but my cakes always come out dense as bricks! Recipes for cakes without eggs also welcome of course. My 3-year old son would be ever so greatful…


I’ve had a lot of luck replacing eggs in cake recipes with silken tofu (1/4 cup = 1 egg). It makes for a moist cake with good, dense texture.  You can also use bananas (if flavor isn’t an issue) or a hearty applesauce to add moisture and help bind the ingredients. If lift is a problem, try adding a little extra baking powder (not soda) to the dry ingredients. I have a vegan red velvet cake recipe that is better than the original, I’ll dig it out and add it to my post when I find it.

To add the tofu to a recipe, either puree it in a blender or mash it through a mesh strainer.


2 oz red food colour
3 Tbsp. Unsweetened cocoa
1/2 cup butter (or margarine/shortening)
1 1/2 cups sugar
2 eggs (1/2 cup tofu)
1 tsp. Vanilla
2 1/4 cups cake flour
1/4 tsp. Salt
1 tsp. Baking powder
1 cup buttermilk (or plain yogurt/soy yogurt/sour cream)
1 Tbsp. Vinegar
1 tsp. Baking soda

Thoroughly combine food colour and cocoa, set aside. Cream together the butter and sugar till light and fluffy. Add eggs and vanilla and mix well. Add cocoa mixture and beat until well combined. Sift dry ingredients together and add gradually to wet ingredients. Beat two minutes. Add buttermilk and beat till smooth. In a small bowl, mix baking soda and vinegar, add to batter and beat 1 minute. Divide batter evenly among 2 9″ pans or spread into a 9″ x 13″ baking pan. Gently shake pans to even out the batter (batter will be thick). Bake at 350F for 30-35 minutes. Let cakes cool completely before assembling and decorating . You can use a cooked frosting recipe for this. it’s also great with cream cheese icing.

Eggless Cinnamon Coffee Cake

2 cups brown sugar
2 cups flour
1/2 cup butter, softened
2 teaspoons cinnamon 1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla
1/2 cup chopped pecans or walnuts

Preheat oven to 375 degrees F.

Mix the sugar, flour, and butter until it has the consistency of fine crumbs. Remove 1/2 cup of crumb mixture and mix with the cinnamon and nuts; set asside for the toping. To the remaining flour mixture add baking soda, baking powder, salt, buttermilk and vanilla mixing well.

Turn the mixture into a greased 9-inch round or square cake pan. Sprinkle the reserved crumb/nut mixture over the top and bake at 375 degrees F. For about 30 minutes or until toothpick inserted in center comes out clean.



I’m looking to make a sponge cake , for someone’s birthday celebration. I’m not vegan so I can use milk and butter as per usual – but no eggs, or animal fat.

This is a wonderfully rich and moist cake. It’s my daughter’s favourite. She is allergic to eggs. Don’t let the vinegar scare you. You can’t even tell it’s there.
Scrumptious Egg Free Chocolate cake
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup white sugar
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
5 tablespoons vegetable oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water
1/2 cup semi-sweet chocolate chips
Preheat oven to 350 degrees F (175 degrees C). Grease an 8×8 inch baking pan.
In a large bowl, combine flour, salt, sugar, cocoa powder, and baking soda. Mix well with a fork, then stir in oil, vinegar, and vanilla extract. When dry ingredients are thoroughly moistened, pour in cold water and stir until batter is smooth. Stir in chocolate chips and pour batter into prepared pan.
Bake in preheated oven for 30 to 35 minutes, until a toothpick inserted in center comes out clean. Cool on a rack.
